This is how it is prepared: First you have to remove the starch from the rice. To do this we put it in a colander and keep it under the tap water (when the starch has disappeared the water filtered by the rice will stop being whitish and will be transparent again). We boil the rice for about 20 minutes over low heat. When it is done we pass it to a fountain and let it cool. Meanwhile, we prepare the mixture for the rice. In a bowl put three tablespoons of vinegar and one sugar, and shake until it is almost dissolved. We add this mixture to rice.

Next we prepare the sushi rolls: we cover the mat with transparent film and we put a sheet of nori seaweed (leaving three fingers of margin between the alga and the edge of the mat). Spread the rice evenly over the nori and add the fish, cucumber or avocado cut into small pieces and a pinch of wasabi on the bottom. To roll the sushi, we take the bottom of the mat and we wrap as we tighten gently so that all the ingredients are pressed. It is only left to cut into pieces of two or three centimeters thick and serve with soy sauce.
